ए-१ आणि ए-२ दुधाचा सिद्धांत

   क्षयरोगाच्या बरोबरीने हृदयरोगास विदेशी गोवंशाचे दूध धोकादायक असल्याचे संशोधन न्यूझीलंड व आफ्रिकेतील मानवाच्या डॉक्टरांनी केले आहे. त्यातूनच ए१  आणि ए२  सिद्धांत १९९३ मध्ये मांडला गेला.

   युरोपीय गाईच्या दुधात ए१ बीटाकेसीन असते, त्याचे आतड्यात पचन होऊन बीटा केझोमॉर्फिन-७ (Beta Cosmo Morphin-7  ) हे पेप्टाइड तयार होते.

बीटा केझोमॉर्फिन-७  रक्तात शोषले गेल्यास पहिल्या प्रकारचा मधुमेह, हृदयरोग, स्वमग्नता आणि सिझोफ्रोनियासारखे रोग माणसांना होतात.

   युरोपीय गोवंशाच्या दुधापासून तयार होणाऱ्या बीटा केझोमॉर्फिन-७ ला डॉ. किथ वूडफॉर्ड यांनी डेव्हिल म्हटले. त्यांनी सन २००७ मध्ये "DEVIL IN THE MILK"हे पुस्तक प्रकाशित करून जगभर खळबळ माजवली.

There are 12 genetic variants of beta casein (A1, A2, A3, B, C, D, E, F, G, H1, All Indian native cattle breeds like Gir cow produces only A2 milk (3) while the foreign cattle breeds like HF breed produces only A1 type of milk and Jersey breed produces higher A1 and low A2 milk.
